Back in 1941, as a result of the war, Siena’s pork butchers decided to join forces to process the meat independently, thus giving rise to Salcis, an acronym of Società Anonima Lavorazione Carni Insaccati Siena. In 1960, Salcis also began making sheep’s milk products, and in 2000, the premises comprising the pork butchery and dairy moved to the foot of the splendid Monteriggioni Castle.
All traditional Tuscan salamis are made from carefully selected raw materials. The meat comes exclusively from Tuscan farms with certification, which also provide the premium-quality Cinta Senese and Suino Grigio pork.
All the ranges of Pecorino sheep’s milk cheese, aged and matured for a variety of periods, are made with milk from the pastures of Crete Senesi area, where our animals are also bred.
Quality raw materials are a must for us, hence our decision to start breeding our own animals, to allow us to control the whole production chain. Our sheep farm, created in 2015 in the splendid area of Fogliano, just 2 km from Siena, is a model facility, thanks to the natural materials it is built with and the care taken to ensure he wellbeing of the flocks.
Visitors to the facility can purchase salami and cheese produced by the company, as well as carefully selected fresh meats.
